Founded in 2010 by an award-winning barista, Tim Adams Specialty Coffee is an absolute gem of a roaster that I first discovered during my year abroad on Australia's Sunshine Coast. What makes them my absolute favorite local spot—and the undisputed highlight of my month—is their deep respect for the entire lifecycle of the craft. They go beyond standard fair-trade by traveling the globe to source crops directly, ensuring farmers get a fair price, and back in the roastery, they obsess over the perfect Rate of Rise and development time to showcase each bean's unique terroir. It is a spectacular, ethically driven coffee experience that refuses to compromise on quality, and I cannot wait to be back in their shop this November.
